How to Care for your Dishwasher
Dishwashers are wonderful machines. They make our lives easier and save us precious time until they break or stop cleaning properly. Here are some tips to care for your dishwasher:
1. Clean the Trap – Food collects in the trap and can prevent the machine from cleaning. Most manufacturers recommend you clean this out at least once a month.
2. Clean Around the Door Seals – Spills can collect around the door. Just wipe regularly with a damp cloth.
3. Inspect the bottom of your dishwasher around the drain. There will be a grate or grill around the drain. This is where waste water goes. Look for food or other debris clogging up this area. You shouldn’t have to clean this often if you’re careful about what you put in your dishwasher, but you should remove any solid matter that builds up, especially bits of paper, shards of broken dishes, food chuncks, etc.
4. Refill your Dishwasher’s Rinse Aid Dispenser – Prevent spots on your dishes by keeping this dispenser full. The refill area varies by make and model but most are located on the door and have a removable or flip top cap. Just open that and fill to top. Check this at least once a month.
5. Clean under the bottom of the door – In some dishwashers, this is an area where water doesn’t go, so it can accumulate debris. Wipe this off as needed.
6. Run the garbage disposal before starting the dishwasher – The dishwasher drains into the same pipe as your sink, so that drain must be clear.
7. Remove hard water deposits or scale, if needed – Run one cycle of your dishwasher empty, with a mild, acidic product of your choice. A “light” or short cycle is usually sufficient. Place powders into the detergent cup. Place liquids in a right-side-up cup or bowl in the top rack. Use whichever of the following is on hand or inexpensive: Lemonade drink mix or lemon-flavored Kool-Aid mix. (Avoid strong colors that might stain and don’t add any sugar), Tang (powdered), Lemon juice, Distilled white vinegar, Any brand of dishwasher cleaning product.

Baked Macaroni and Cheese with Black Truffle Oil – from Sub Zero’s Kitchens
1 pound (4 cups) macaroni elbows
2 tablespoons unsalted butter
6 tablespoons black truffle oil, divided
6 tablespoons flour
2 1/2 cups whole milk
2 cups chicken broth
1 pound sharp Cheddar cheese, grated
2 thick slices (about 1/3 pound) deli ham, diced
2 tablespoons chopped black truffles, optional
1 cup panko unseasoned Japanese bread crumbs
PREPARATION
Position oven rack to rack position 3. Preheat Wolf electric oven in CONV at 350°F.
In large stockpot on Wolf cooktop over high heat, bring 6 quarts salted water to a boil. Add pasta and boil according to package directions. Drain and rinse under cold water. Set aside.
Meanwhile in 6-qt stockpot or larger on Wolf cooktop over medium heat, place butter and 4 tablespoons truffle oil. When hot, add flour and cook for two minutes, stirring with a whisk. Add milk and chicken broth. Bring to a boil and reduce to a simmer, stirring often and scraping the bottom with a heat proof spatula. (Mixture should thicken after simmering 5 minutes.) Add cheese and stir until melted. Remove from heat. Add ham, pasta and chopped black truffles, if desired. Spread into greased 13×9-inch baking dish.
In a small mixing bowl, toss bread crumbs with remaining 2 tablespoons black truffle oil. Evenly coat the top of mixture with bread crumb mixture. Place in oven and bake 30 to 40 minutes or until the top is golden brown.
Makes 12 (1 cup) servings.
